My Story (Journey into Solo Cooking)

I worked in project management for six years before joining FlavorFork.net. My days were spent building systems, optimizing processes, and making multi-million dollar projects run smoothly. Then I’d come home to Portland, and my personal life was complete chaos. Specifically, dinner. I lived alone, had zero plan for meals, and would stand in my kitchen at 6:30 pm every night like, “What am I gonna eat?” I’d order takeout, make toast, eat cereal for dinner. Repeat. On Sundays, I’d try to get ambitious—buy a ton of groceries at New Seasons and make huge batches of everything. By Wednesday, I was sick of eating the same thing. By Sunday, I was throwing out questionable containers of food. Wasting food. Wasting money. Hating the whole process.

The Turning Point (Specific Moment that Changed Everything)

August 2023. I opened my fridge and counted eight containers of meal prep that I wasn’t going to eat. I did the math and realized I was wasting almost $2,000 a year on spoiled food. My professional life was literally dedicated to optimizing systems, and I couldn’t figure out how to feed myself efficiently. It felt ridiculous. That’s when it clicked: meal prep blogs are written for families or people trying to eat the exact same thing all week. I’m one person who needs variety. I needed a different system. I stopped listening to the blogs and started treating meal planning like a work project.

What I Learned the Hard Way (Real Failures and Struggles)

The biggest failure was trying to apply a “family” solution to a “solo” problem.

  • Boredom is the #1 Enemy: Making huge batches of one meal is easy prep, but it guarantees burnout and waste by Wednesday. The system failed because it didn’t account for the human need for variety.
  • The Myth of Full Prep: Spending three hours cooking all meals on Sunday is a massive energy drain and often unnecessary. The burnout is real, and it makes you dread the next week’s prep.
  • Wasting the Wrong Things: My grocery lists were the problem. Buying a whole head of cauliflower when I only needed half a cup, or a bundle of scallions for one recipe. Budget cooking is about smarter lists, not just cheaper ingredients.

What actually works: strategic partial prep. Chop some stuff, cook some components, and leave the final assembly for weeknights. Takes about an hour on Sunday, but it keeps things interesting.

My Approach Now (Current Methodology)

I build meal plans like I’d build a project timeline at work.

  • Goal & Constraints: The goal is usually: eat decent food, zero waste, zero stress, and have variety. The constraints are always: limited fridge space, limited time, limited budget.
  • The System: The solution is strategic meal plans that share ingredients across multiple, different meals. This is the key to variety with minimal waste. One head of broccoli becomes a side dish, a stir-fry component, and a soup base over three days.
  • System-Focused Deliverables: Every meal plan on FlavorFork.net includes the exact shopping lists (with quantities for one), a prep schedule that fits into real life (usually under an hour), clear storage instructions, and a cost breakdown.

My beliefs are centered on efficiency and practical results.

  • Good Systems Beat Good Intentions: Motivation runs out by Tuesday night. Systems keep working even when you’re tired.
  • Meal Prep Means Variety: Meal prep should allow for variety. If you’re eating the same thing all week, you’re using an outdated system that leads to waste.
  • Budget Cooking is Strategy, Not Sacrifice: You don’t need to eat just beans and rice. You need a smarter, more efficient grocery list that minimizes waste.
  • One Hour of Planning Saves Five Hours of Stress: Figure out your meals and prep on Sunday; coast through the week.

  • The Grind: I still work in project management part-time. I can’t help it—I genuinely like building systems that work.
